Nancy Miller's recipe for quick baked apples

WEST BRATTLEBORO — Nancy Miller offered this recipe to guests at a recent gleaning party at Cortland Hill Orchards.

“This works with a Macintosh or Cortland apple.

“Remove the core, and fill the cavity with two layers of oatmeal, raisins or cranberries, butter, and maple syrup.

“Prick the skin of the apple, place a sheet of waxed paper on top of the apple, and microwave the apple for two or three minutes, depending on the size of the apple.”
